Indicative phases of the milling season. Price per litre of the best-value format.

September is the early harvest: greener olives, a lower yield, a firmer oil. October follows a few weeks later, with a better yield and a very close character. Olives milled later in the season become our Olio EVO.

IL RACCONTO THE STORY

The mill is open. The new milling season began on 21 September 2026: Caninese olives go into the mill and the new-season extra virgin olive oil comes out — straight to you, no middlemen.

We make this oil once a year. Olives from the Tuscia viterbese, milled within 24 hours of harvest and cold-extracted below 27 °C, to keep its aromas intact. Every harvest differs from the last, and when it runs out you wait for the next one.

  • Single-cultivar Caninese — one olive, no blending
  • Olives from the Tuscia around Blera, Barbarano Romano, Villa San Giovanni in Tuscia and Vetralla
  • Milled within 24 hours of picking
  • Cold-extracted below 27 °C, on a centrifugal separator
  • Extra virgin — free acidity within the legal limit of 0.8%
  • Unfiltered or filtered, in bottle, tin or bag-in-box

Pre-orders are closed for this season. If the format you want is unavailable, leave your email on the product page and we will tell you the moment it comes out of the mill.

Want to see where it comes from? The mill is in Villa San Giovanni in Tuscia and you are welcome to visit.

We ship across Europe, to the UK (no duty or VAT to pay on delivery) and to the United States (import duty and the courier's clearance fee are charged on delivery); see our shipping policy for details.

CONSERVAZIONE STORAGE

see the best-before date printed on each pack

  • Keep it in a cool, dark cupboard, away from the hob and out of sunlight.
  • Close the cap firmly after every use to limit oxidation.
  • Use an opened bottle steadily: the aroma is at its best in the first months.
  • Do not store it near a heat source, by the oven or on a sunny windowsill.
  • Do not refrigerate — condensation and clouding dull the flavour.
  • Do not decant it into clear glass left in the light.
