The mill is open. The new milling season began on 21 September 2026: Canino olives go into the mill, and the new oil comes out — without passing through anyone else.
We make this oil once a year. Olives from the Tuscia viterbese, milled within 24 hours of harvest and cold-extracted below 27 °C, so the aroma and the pepper stay together. Every harvest differs from the last, and when it runs out you wait for the next one.
- Single-cultivar Canino — one olive, no blending
- Olives from the Tuscia around Blera, Barbarano Romano, Villa San Giovanni in Tuscia and Vetralla
- Milled within 24 hours of picking
- Cold-extracted below 27 °C, on a centrifugal separator
- Extra virgin — free acidity within the legal limit of 0.8%
- Unfiltered or filtered, in bottle, tin or bag-in-box

- Keep it in a cool, dark cupboard, away from the hob and out of sunlight.
- Close the cap firmly after every use to limit oxidation.
- Use an opened bottle steadily: the aroma is at its best in the first months.
- Do not store it near a heat source, by the oven or on a sunny windowsill.
- Do not refrigerate — condensation and clouding dull the flavour.
- Do not decant it into clear glass left in the light.
