IL RACCONTO THE STORY
Our extra virgin olive oil is made in the heart of the Tuscia viterbese from four local cultivars: Caninese, Frantoio, Leccino and Moraiolo. It comes in 3 L (101 fl oz) or 5 L (169 fl oz) tins, sold in pairs — the format for kitchens that cook with olive oil every day. The olives come mostly from growers in Blera, Barbarano Romano, Vetralla and Villa San Giovanni in Tuscia, on volcanic soils with wide day-night temperature swings and Mediterranean sun. Milling takes place within 24 hours of harvest, with cold extraction below 27 °C to keep the aromas intact. Available unfiltered (grezzo) or filtered. - Keep it in a cool, dark cupboard, away from the hob and out of sunlight.
- Close the cap firmly after every use to limit oxidation.
- Use an opened bottle steadily: the aroma is at its best in the first months.
- Do not store it near a heat source, by the oven or on a sunny windowsill.
- Do not refrigerate — condensation and clouding dull the flavour.
- Do not decant it into clear glass left in the light.
