Storing the Oil

How do I store extra virgin olive oil correctly?

Extra virgin olive oil should be kept in a cool, dark place, away from sources of heat and direct light. The ideal temperature is between 14°C and 18°C. Avoid keeping it near the cooker or on the windowsill. Once the bottle is opened, use it within 3-4 months to enjoy its organoleptic qualities at their best.

How long does extra virgin olive oil last?

Our Canino extra virgin olive oil, if stored correctly and sealed, retains its optimal properties for 18-24 months from the bottling date. Once opened, we recommend using it within 3-4 months.

Can I store the oil in the fridge?

We advise against storing it in the fridge. Low temperatures can cause the oil to solidify which, although it does not alter the quality, can be inconvenient for everyday use. A cool but not cold environment is ideal.

Quality and Characteristics

How do I recognise a quality extra virgin oil?

A quality extra virgin oil can be recognised by several factors: a colour ranging from intense green to golden yellow, a fruity aroma with grassy notes, and a palate that balances bitterness and pungency. These last two attributes are positive indicators of the presence of polyphenols and antioxidants. Our Canino oil has a medium-intense fruitiness with notes of artichoke and fresh almond.

What is the difference between filtered and unfiltered oil?

Unfiltered oil retains microparticles of pulp and vegetation water that give it a cloudy appearance and a more intense flavour. Filtered oil, on the other hand, is clearer and has a slightly longer shelf life. Both retain the same nutritional properties; the choice comes down to personal preference.
