The Three Enemies of Extra Virgin Oil

1. Light

Exposure to light, especially direct sunlight, triggers photo-oxidation processes that degrade chlorophyll and carotenoids, altering the colour, flavour and nutritional properties of the oil. For this reason, our oil is packaged in dark glass bottles or in tins.

2. Heat

High temperatures accelerate oxidation and rancidity. The ideal storage temperature is between 14°C and 18°C. Absolutely avoid storing the oil near the hob, the oven or other heat sources.

3. Air

Contact with oxygen sets off oxidative processes that deteriorate the oil over time. After each use, always reseal the bottle carefully and choose formats suited to your consumption to prevent the oil from remaining in the bottle for too long.

Ideal Containers for Storage

  • Stainless steel: The very best material, completely impermeable to light and air
  • Dark glass: Excellent protection from light, allowing you to monitor the oil level
  • Tin: Outstanding barrier against light and oxygen, ideal for large quantities
  • Ceramic: Good protection, traditional and decorative

To be avoided: clear glass bottles, plastic containers (which can release substances into the oil) and any vessel that does not ensure an airtight seal.

Where to Store Oil at Home

The ideal place is a cool, dark pantry, away from windows and heat sources. If you do not have a suitable pantry, a closed cabinet in the coolest part of the kitchen can be a valid alternative. Avoid the refrigerator: low temperatures cause the oil to solidify and can alter its organoleptic characteristics.

How Long Does Extra Virgin Olive Oil Last?

A quality extra virgin oil, stored correctly, retains its optimal characteristics for 12-18 months from the bottling date. However, to fully enjoy its aromatic profile and its benefits, we recommend consuming it within 12 months of pressing. New, freshly milled oil offers the greatest intensity of aromas and flavours.

Signs of Deterioration: How to Recognise an Oil That Has Gone Off

Learn to recognise these warning signs:

  • Rancid smell: A hint of old walnut, wax, wax crayon or smoked meat
  • Abnormal taste: A metallic, mouldy, vinegary flavour, or one that is unpleasantly and excessively bitter
  • Altered colour: Loss of the lively green-gold, tending towards a dull yellow
  • Excessively oily consistency: The oil appears thicker and stickier than usual

If you notice one or more of these signs, the oil is no longer suitable for consumption raw. You may possibly use it for frying or dispose of it correctly.
